Zucchini Noodles + Avocado Pesto

You guys, I met a friend in my Sports Medicine class this last semester. Her name is Lauren Olson and she is a wizard at cooking. I was looking for new fun recipes and she sent me some of her favy favs. Here is one I loved. Here is the problem though, I don’t have a picture from when I made it {this is a google stock photo} .. so as you guys try it please feel free to send me pictures of your masterpieces! Zucchini Noodles with Avocado Pesto

Recipe: (serves 3)

6 zucchini

2 avocados

6 T olive oil (plus some for sautéing)

2 lemons

2 garlic cloves

Chives

1⁄2 cup fresh basil

1⁄2 cup Italian parsley

salt & pepper

Slivered almonds

Spiralize zucchini and sauté with avocado oil and salt in pan on medium heat until al dente. For pesto: blend avocados, 6 T olive oil, 2 lemons, lemon zest, 2 garlic cloves, 4 t chives, 1/2 cup fresh basil, Italian parsley, salt and pepper. Top with goat cheese and slivered almonds. 

This recipe calls for goat cheese but since I break out with horrible acne when I have dairy (& maybe some gas/bloating) I skipped out on that. If you don’t do well with dairy then just skip the cheese, it was still super scrumptious (haha does anyone ever really use that word that is under the age of 70?)
